Cooking recipe

1. Freeze the bananas

24 hours before serving, peel and thinly slice bananas (about 1/4 inch thick) and spread on a parchment- lined baking sheet. Freeze until solid. If not using the same day, transfer to a freezer bag .

2. Make the ice cream

Blender method: Pour milk and vanilla into blender jar, then add frozen banana slices. Keep lid on and blend, starting on low speed and increasing to high speed. Scrape down sides and repeat as needed to achieve a smooth puree.

Food processor method: Place frozen banana slices in the bowl of a food processor and pulse, breaking the banana into small pieces. Scrape down the sides, add the vanilla and almond milk, and pulse until smooth.

3. Serve

Once there are no more lumps , transfer to serving bowls , or to a storage container and freeze. If the puree is softer than you like, freeze for 30 minutes to 1 hour, then stir.

If you freeze ice cream until solid, let it sit at room temperature for 30 minutes to 1 hour to soften before serving.
