Say hello to grilling season with these flavorful veggie burgers !
Serve them in buns , on a salad , or on their own. However you serve them, they're sure to be a crowd pleaser!
Trust me, I love grilled meats, but I also want to offer something delicious to my vegetarian friends and store-bought frozen veggie patties don't always cut it.
I find most of them to be under -seasoned and mushy. So say hello to these homemade veggie burgers !
These burgers are loaded with spices like cumin and paprika , and a few other ingredients to hold them together on the grill.
I like to start burgers with a chickpea base, which gives them a nice mouthfeel —that's a fancy way of saying they're nice to chew—and can handle the heat of a grill .
Carrots join the party to bring a little sweetness and color!
They are so full of flavor that you won't miss the beef . Even my three year old ate a whole burger!
A common question about veggie burgers is whether they will hold up on the grill without falling apart.
Rest assured, these burgers hold up very well, provided the grill is clean (to prevent them from sticking) and you handle them carefully when turning them.
If you're still worried about them sticking, you can brush the grill with a little oil or use a grill pan .
For better hold on the grill, it is advisable to prepare the mixture in advance and let it cool a little in the refrigerator (if time permits). You can also prepare them immediately, but the patties may be a little more fragile.
These burgers come with a delicious creamy, herby green goddess sauce . I added avocado to thicken it up and make it easier to spread on the burgers.
These vegetable patties are also tasty enough to serve on their own or on a salad.
So they're perfect for gluten-free guests (just use gluten-free breadcrumbs for the binder).
Just pour the green goddess sauce on top and serve!

If you don't have a grill, don't panic !
You can definitely cook these veggie burgers in a skillet . Simply form the patties and cook them with a little oil in a skillet over medium heat for 4 to 5 minutes on each side, until lightly browned and firmed up.
You'll probably have some leftover green goddess sauce. This sauce is a great dip for fresh vegetables or can be made into a vinaigrette by thinning it with a dash of vinegar and olive oil .
The sauce will keep safely in the refrigerator for at least a week, but its fresh herb flavor will diminish slightly over time.
